Super Summer Salad

Almost every day, I eat a salad for lunch. Not only because it’s convenient but also because I want to make sure I get a large dose of raw, colorful veggies full of phytonutrients, enzymes and vitamins. Easy and nutritious is my favorite kind of combination!

I have tried and experimented with all kinds of ingredients, from different kinds of lettuce to an array of seeds, nuts and dressings. It is really fun to change it up simply by varying the different produce. But I must say, I think I have perfected the perfect summer salad with the most delicious hemp, lemon and garlic dressing.

 

If I let you in on the recipe, promise that you will try it? Because it’s THAT good.

So my gift to you….the Super Summer Salad. Makes enough for 2.

But first, the dressing!

Hemp-Lemon-Garlic Dressing 

1 cup hemp oil

1/2 cup fresh squeezed lemon juice

3 cloves garlic

1/2 tsp high quality salt (Himalayan, Icelandic, Sea salt)

1/2 tbs Herbamare

Place all ingredients in a high speed blender. Blend on high for 1 minute. Store the leftover dressing in a glass, air tight container. Use within 5-7 days.

Super Summer Salad 

3 large handfuls of greens (Your choice: kale, baby spinach, mixed lettuce, romaine)

1 carrot shredded

1-2 tablespoons hemp seeds 

1/2 avocado

1 handful white mushrooms

1 handful coconut crisps (best kind is DANG)

3 fresh figs, cut into pieces

1 handful Microgreens (Purple Daikon Radish is my favorite)

1 handful Sprouts (Alfalfa or Sunflower)

Place all ingredients in a large bowl. Drizzle dressing over and mixed well.

Serve and enjoy!
